Corona Virus isolation ~ Day 69: Anita's Chilequiles

Chilequiles is a dish native to Mexico often served as breakfast with eggs, however, it is terrific for lunch! It consists of strips of fried corn tortillas simmered in salsa, and served with cheese, eggs, or beans. There are a bazillion ways to prepare them (link below).       
        
chicken strips       
fried tortillas       
black olives       
toasted cauliflower
egg, scrambled
cheese drawn together by enchilada sauce       
pan-cook 
or bake as a casserole
