Chilequiles, egg & toasted cauliflower

Chilequiles is a dish native to Mexico
often served as breakfast with eggs, however, it is terrific for lunch! It consists of strips of fried
corn tortillas simmered in salsa, and served with cheese, eggs, or
beans. There are a bazillion ways to prepare them (link below).
