Corona Virus isolation ~ Day 169: Canelones pa comer

Canelones came to Spain by way of Barcelona when, in the sixteenth century, Italy was ruled by the Spanish Crown and communication between the two countries was close. Although other types of pasta are uncommon in Spain, canelones are found everywhere. The dish is now considered quite Spanish and should properly be a part of any Spanish cookbook.     

3 tablespoons olive oil
1 medium onion, finely chopped
1 garlic clove, minced
1½ pounds mixture of ground beef, veal and pork
1 chicken liver, chopped
4 tablespoons minced cured ham
1½ cups tomato sauce, preferably home made
1 tablespoon dry (fino) sherry
2 tablespoons minced parsley
1 egg lightly beaten
2 tablespoons bread crumbs
6 tablespoons grated Parmesan cheese
salt
freshly ground pepper
butter

Dough:

1 egg
2 tablespoons melted butter
1½ cups water
1½ cups flour

White sauce

5 tablespoons butter
5 tablespoons flour
2 cups milk
3 tablespoons grated Parmesan cheese
salt
freshly ground pepper
dash of nutmeg

Cannelloni (pronounced [kannelˈloːni]; Italian for "large reeds") are a cylindrical type of lasagna, possibly one of the oldest types of pasta.

Cannelloni are generally served baked with a filling and covered by a sauce in Italian cuisine. Popular stuffings include spinach and ricotta or minced beef. The shells are then typically covered with tomato sauce.         

Cannelloni are also a typical dish of the Catalan cuisine, where they are called canelons and traditionally consumed on Saint Stephen's Day, also called the Feast of Saint Stephen, a Christian saint's day to commemorate Saint Stephen, the first Christian martyr or protomartyr. It is an official public holiday in Catalonia as well as many other European countries.   

Early references to macheroni ripieni (stuffed pasta) can be traced back to 1770; but the word cannelloni seems to have appeared at the turn of the 20th century. Manicotti are the American version of cannelloni, though the term may often refer to the actual baked dish. The original difference may be that cannelloni consisted of pasta sheets wrapped around the filling, and manicotti was machine-extruded cylinders filled from one end.      

Just in passing, there are some great bands and songs ranging from traditional to garage to house music by the name of or referring in some way to canelones. In particular there is a terrific hip hop song, Canelones, by Flowtime, a group from Barcelona, who have a video that is a lot of fun to watch; the lyrics (link below) speak of the ingredients and the making of canelones by the mother of the singer . . .

. . . however, the visuals say something completely different with a very wide range of references (link below).

And the Capitol of Uruguay is Canelones, the name derived from a species of cinnamon, which is called "canelón", growing along the banks of a river. It is about 50 kilometres (31 mi) North of Montevideo.

Raymond Massey ~ Thespian Extraordinare

Today is the birthday of radio, stage and screen actor, Raymond Massey. His most dramatic roles were his portrayals of the eighteenth president of the United States, Abraham Lincoln.

Massey scored a great triumph on Broadway in the Robert E. Sherwood Pulitzer Prize-winning play Abe Lincoln in Illinois despite reservations about Lincoln's being portrayed by a Canadian. He repeated his role in the 1940 film version, for which he was nominated for the Academy Award for Best Actor. Massey again portrayed Lincoln in The Day Lincoln Was Shot on Ford Star Jubilee (1956), a silent appearance in How the West Was Won (1962), and two TV adaptations of Abe Lincoln in Illinois broadcast in 1950 and 1951. He once complained jokingly that he was "the only actor ever typecast as a president." His preparation for the role was so detailed and obsessive that one person commented that Massey would not be satisfied with his Lincoln impersonation until someone assassinated him. On stage in a dramatic reading of John Brown's Body, by Stephen Vincent Benét (1953), Massey, in addition to narrating along with Tyrone Power and Judith Anderson, took on the roles of both John Brown and Lincoln.           

My favorite role of his was when he starred in Things to Come, in 1936, a film adaptation by H. G. Wells of his own speculative novel The Shape of Things to Come (1933). The cultural historian Christopher Frayling called Things to Come "a landmark in cinematic design". The film also starred, Ralph Richardson, Cedric Hardwicke and Ann Todd.

Massey became an American citizen in 1944. After he became an American citizen, he continued to work in Hollywood. Memorable film roles included the husband of Joan Crawford during her Oscar-nominated role in Possessed (1947) and the doomed publishing tycoon Gail Wynand in The Fountainhead (1949), with Patricia Neal and Gary Cooper. In 1955, he starred in East of Eden as Adam Trask, father of Cal, played by James Dean, and Aron, played by Richard Davalos.      

But Massey had a good sense of humor: he played Jonathan Brewster in the movie version of Arsenic and Old Lace which is proof Massey could take a joke. Brewster was created for Boris Karloff, who played the part on Broadway, but was unavailable for the movie. The character required Massey to look like the Frankenstein monster. A running gag in the play and the film was the character's resemblance to Karloff. It was an American black comedy film directed by Frank Capra and starring Cary Grant, Peter Lorre, Jack Carson; the score for the film was written by Max Steiner of King Kong fame.

Massey was born in Toronto, Ontario, on August 30, 1896. He was the great-grandson of founder Daniel Massey, whose branch of the Massey family emigrated to Canada from New England a few years before the War of 1812, their ancestors having migrated from England to the Massachusetts colony in the 1630s.         

Massey joined the Canadian Army at the outbreak of World War I, and served on the Western Front in the Royal Regiment of Canadian Artillery. Lieutenant Massey returned to Canada after being wounded at Zillebeke in Belgium during the Battle of Mont Sorrel in 1916 and was engaged as an army instructor for American officers at Yale University. In 1918, he was recalled to active service and joined the Canadian Siberian Expeditionary Force that went to Siberia during the Allied intervention in the Russian Civil War. On the orders of his commanding general, he organized a minstrel show troupe with himself as end man in blackface to bolster morale of allied troops on occupation duty in Vladivostok.           

In 1942, during World War II, Massey rejoined the Canadian Army and served as a major in the adjutant general's branch. After being wounded, he was invalided from the Canadian Army in 1943.
Raymond Massey died of pneumonia in Los Angeles, California on July 29, 1983, he was 86 years old. His death came on the same day as that of David Niven, with whom he had co-starred in The Prisoner of Zenda and A Matter of Life and Death. Massey is buried in Beaverdale Memorial Park in New Haven, Connecticut.

Today is the birthday of Barbara Eden who was born in Tucson, Arizona, on August 23, 1931. She is an American film, stage and television actress, and singer, best known for her starring role of "Jeannie" in the sitcom I Dream of Jeannie. From September 18, 1965, to May 26, 1970, Eden played a beautiful genie set free from her bottle by astronaut and United States Air Force Captain (later Major) Anthony "Tony" Nelson, played by Larry Hagman.

In 1967, Eden recorded an album, Miss Barbara Eden, which is quite good; Eden has a great voice and does a terrific job especially with the standards: I’m A Fool To Care written by Ted Daffan in 1940, Dream written by Johnny Mercer in 1944, and Heartaches with music by Al Hoffman and lyrics by John Klenner published in 1931.

Then there is Bend It! This is my favorite song on the album! It was written by and . The tune was first recorded and released by a British pop/rock group, in September of 1966. It starts lento then quickly goes vivace, back and forth, similar to the song, Zorba's Dance by Greek composter Mikis Theodorakis. There is a great video on YouTube with Eden singing and dancing to the song (link below). It's a lot of fun to watch!

Barbara Eden became a leading lady in films, starring opposite Gary Crosby, Barry Coe, and Sal Mineo in A Private's Affair. She had a co-starring role in Flaming Star (1960), with Elvis Presley.

She performed with many greats of TV and film with featured appearances on shows such as The West Point Story, Highway Patrol with Broderick Crawford, Private Secretary with Ann Sothern, I Love Lucy, The Millionaire with Marvin Miller, Target: The Corruptors! with Stephen McNally, Crossroads (James Dean appeared in a 1955 episode, Broadway Trust, along with Lloyd Bridges and Mary Treen. The episode aired five weeks after Dean died in an automobile crash in September of 1955), Perry Mason with Raymond Burr and William Hopper, Gunsmoke with James Arness, December Bride with Spring Byington, Bachelor Father with John Forsythe, Father Knows Best with Robert Young and Jane Wyatt, Adventures in Paradise with Gardner McKay, The Andy Griffith Show, Cain's Hundred, Saints and Sinners with Nick Adams, The Virginian with Doug McClure, and Lee J. Cobb, Slattery's People with Richard Crenna and Ed Asner, The Rogues with David Niven, Charles Boyer, and Gig Young, and the series finale of Route 66 with Martin Milner and George Maharis.
